January 8, 2022

Where do I start, Cabin is almost finished. Had fun putting things together these last 4 years, coming up with ideas from what I had. It's been a wonderful adventure and learned many things about building your own cabin. The only thing that happen was bad and heart broken is my beloved Annie, the heartbeat at my feet is no longer beating at my feet. She passed way in December 23, 2021. She was under my feet all the way through this adventure and made the hard days happy. She was 15 years old and went quick. I was always thinking what to name our little cabin, now I know ... "Annie's Cabin". She probably has more hair than insulation in the place..lol. She has made her mark on everything.

Adventure- cabin finishing inside

I am on the planning stage of the inside,  I have a few ideas I got off other websites.  But I have to plan for a Thanksgiving dinner. With only a hot plate and crockpot there's no room for a bad meal.  So this is what I have came up with...

banquet turkey with gravy meal, stove top stuffing and potatoes in my crockpot. First potatoes with a little butter and milk then top of that stuffing mix and banquet Turkey on top, may add more gravy, gotta have lots of the good stuff.  Cook for 4 hours. Anyway that's what I am thinking.  As you can see I have no kitchen yet.

My cabin

I think its worth the effort and time to build your dream.  I have come a long way since the beginning of this year.  My DIY project is a hard adventure and I  have to save for the inside but living at the same time. I'm loving it.

Adventure- other side of cabin arrived

Perfect day for cabin delivery! Its coming together finally.  A very long DIY adventure with a tiny cabin but I still have to do the inside before winter.  That's not going to happen but I will move into the cabin when I get insulated.  I have to, my budget is slowly going away.  But I love my little cabin and Hilltop sheds and cabins did a fine job matching the color.  My little simple world is coming together.

Adventure- backside of the cabin arrived

Well half of the cabin arrived,  I was happy but ofcourse it started to rain again so the other half could not be delivered.  So I sat and dreamed.

and little Annie supervised.

INSTRUCTIONS

In a skillet, cook bacon until crisp and drain on paper towels leaving about 1 tablespoon bacon grease in the skillet.

Brown onion and beef in the bacon fat. Once browned, drain excess fat and add to a 6qt (or larger) slow cooker.

Add all remaining ingredients to the low cooker and stir to combine (it will be very full).

Cover and cook on high 3-4 hours or low 6-7 hours until rice is fully cooked.

Stir in half of cooked bacon.

Spoon into bowls, top with remaining bacon and parsley if desired.
There's nothing like a good crockpot to help with cooking,  I have 2 small,  1 medium and 1 large would not go without them.

Adventure- concrete foundation

Concrete blocks arrived
Now then it rains for a month.  I was beginning to wonder if this was the right choice.  But started to  think what to cook on a hot place or crock pot made me calm down and enjoy.

And 21 tons of dirt it what I moved by myself on a week's vacation. My little Annie was the supervisor.
