Classic Creamed Spinach

2 boxes (10 oz each) frozen spinach
1/4 cup butter
1 small onion, chopped
2 cloves garlic, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
2 1/2 cups whole milk
1 teaspoon salt
1/8 teaspoon pepper
Cook spinach as directed on box; drain well.

In 2-quart saucepan, melt butter over medium heat. Add onion; cook 4 to 5 minutes, stirring frequently. Add garlic; cook about 1 minute, stirring frequently, until onion is tender.

Stir in flour with whisk until mixture is smooth and bubbly, stirring constantly. Gradually stir in milk until mixture boils and thickens, stirring frequently. Stir in salt and pepper.

Stir in drained spinach; cook until thoroughly heated.
Cheesy Bacon and Spinach Tortellini Casserole

1 jar (15 oz) Alfredo pasta sauce

1/3 cup water

1 package (19 oz) frozen cheese-filled tortellini

1/2 cup plus 2 tablespoons chopped cooked bacon

1 bag (5 oz) baby spinach, coarsely chopped

2 cups shredded mozzarella cheese (8 oz)

Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish generously with cooking spray.

In medium bowl, mix Alfredo sauce and water. Arrange half of the frozen tortellini in single layer in baking dish; top with 1/4 cup of the bacon, half of the spinach, half of the Alfredo sauce mixture and 1 cup of the mozzarella cheese. Repeat layers. Top with remaining 2 tablespoons bacon.

Spray one side foil with cooking spray and cover baking dish, sprayed side down. Bake 40 minutes. Remove foil; bake 10 to 15 minutes longer or until bubbly around edges and hot in center

My adventure...living in the garage

Now I'm comfortable in the garage,  been thinking for a long time how to live with out a few things like bathroom,  running water, things you don't think about coz they're there in our every day lives.  Electric was on so it helped a lot. My set up in the garage....



My adventure continues

It was very difficult to see the liberty go. I tried to give it away but it was to old to move. So I had to pay to have it torn down.  Now this was scary and heartbreaking.







My adventure ...my new home

Where do I start...I guess back in September 2017. I knew I had to buy a new or used trailer or something because my 1979 liberty was showing her age.  I moved in back in 1983 with my family.  Happy raise my 2 boys , life was wonderful.  Time went by, I was aging and so was my liberty.  I saved hard in the last few years, which is hard when you only make alittle above minimum wage. When I started looking at everything available,  Wow it was a adventurous experience.  Turned down at a few places,  either not enough saved or didn't make enough.  It was heartbreaking,  because I knew I  could pay for  a home. The internet,
This is where I  looked hard for over a year ..and I found it!!! Let's start by showing my liberty my home sweet home,  where at 23 years old,  I was a home owner.

Coca-Cola Pork Chops- 8 pork chops, salt and pepper, 1 cup catsup, 1 cup coca-cola, brown sugar.....Place pork chops in a baking pan. Season with salt and pepper to taste. Mix the catsup and cola, and pour over the pork chops. Sprinkle with brown sugar. Bake uncovered in a 350 oven for 1 hour or until pork chops are tender. Enjoy! I also tried this with chicken...so gooooood
